     Zhenjiang vinegar takes sticky rice as raw  material, it is a kind of typical  rice vinegar. Tao Hong-jing recorded the usage of rice vinegar in <Shenglong Herbal Annotate> in Liang Dynasty. Tao Hong-jing, named  himself Huayang  Hermit, lived in  Soutn-north  Dynasty in Moling, Danyang(nowadays Nanjing) as  a hermit in  Xunqu Hill(nowadays Mao Hill)  and refused the invitation of Emperor Liang Wu, thus got the title of "prime minister in mountain".So the history of Zhenjiang vinegar is over 1,400 years.
    The brewing process of Zhenjiang aromatic vinegar divided in three phase:make alcoholproduce carbohydrate and filter vinegar and in over 40 working procedure,the product cycle is as long as more than 60 days. There is a folk tale that Dukang brewing alcohol, his son brewing vinegar, it is said that Dukan led all his family to come to Zhenjiang and open distillery after he invented brewing method of alcohol,one  his son got the method to use lees to brew vinegar from celestial being in his dream, then he did it and he got a kind of sauce paste-vinegar  with aromatic, acid and sweat taste in  the 21th day, the Chinese name came from  the time the vinegar  was invented. Although the tale can not be validate, the main working procedure  of Zhenjiang aromatic vinegar still takes 21 days today, and the technology is also basically same as the tale.
